Use thinly sliced red cabbage, some shredded carrots and toss it with a homemade balsamic vinaigrette (2 parts olive oil, 1 part balsamic vinegar, heaping tsp of mustard and salt and pepper). Let marinate. Then add raisins and caraways seeds before serving. Click here for a simple cole slaw option.
Roasted Veggies
No recipe is needed, and most veggies are worthy, especially cauliflower, sweet potatoes, carrots, and zucchini mixed together or solo. Toss it with olive oil and salt. Roast at 425 for about 20 minutes or until they have a golden color. Do them on the grill as well.
